Pleiku (say “Play-koo”) sits high in Vietnam's Central Highlands, a town of red earth, pine-covered hills and coffee farms. Mornings there start cool and misty, and the day starts with something hot in a bowl.

That's what we wanted to bring to downtown Salt Lake: a place to slow down over a steaming bowl. Our phở is Mom's recipe, the one she carried with her from Vietnam, and the broth still simmers for 24 hours. No shortcuts, every single pot.

The rest of the menu is simply what we love to eat: fiery bún bò Huế, crab noodle soup, fried rice under a runny egg, and a few dishes that only make sense on Main Street.
